If analytics are important to you, E5 licensing provides Power BI Pro live business analytics and visualisation, and access to My Analytics which gives you data on individual and team effectiveness.
There are some additional communication tools available with E5 licensing, too. These are PSTN Conferencing, which gives you worldwide dial-on for online meetings, Cloud PBX (a business phone system in the cloud) and PSTN Calling - a cost-effective cloud-based dial tone which can be bought as an add-on.
As you can see, E5 licensing for Office 365 is much more comprehensive and gives access to better features for organisations needing enhanced security, communication tools and analytics.

Additional extras include advanced risk-based identity protection with alerts, analysis and remediation; enterprise-grade visibility, control and protection of cloud applications; and intelligent classification and encryption of files shared both inside and outside of your organisation.
When it comes to choosing which is the best plan, you should look at each extra item and determine if your organisation needs it. A lot of the security features can be purchased as add-ons to your current plan if cost is a consideration, as can Voice and Analytics features.
